Mit den Rhabarbern geht es mir \u00e4hnlich wie mit dem Spargel, ich mag fast nicht warten, bis die ersten gross genug sind zum Ernten. Rhabarber schmecken auf viele Arten der Zubereitung gut, sei das als Chutney zu K\u00e4se oder zusammen mit Poulet als pikante Variation. Die meisten m\u00f6gen aber das Stangengem\u00fcse (ja richtig gelesen, es ist ein Gem\u00fcse) s\u00fcss als Kompott oder im Geb\u00e4ck.  <br>In Rhabarber stecken nicht nur jede Menge Mineralstoffe wie&nbsp;Eisen,&nbsp;Kalium&nbsp;und Phosphor sowie viel&nbsp;Vitamin C&nbsp;und auch jede Menge&nbsp;Ballaststoffe, sondern auch viel Oxals\u00e4ure. In Kombination mit Milchprodukten und N\u00fcssen ist Rhabarber besser vertr\u00e4glich. <br>Endlich gabs bei uns wieder die beliebten Rhabarber-Muffin, die schmeckten sogar der Zucker<br>2 Eier<br>200 gr Mehl<br>1 Tl Backpulver<br>1 Prise Salz<\/p>\n\n\n\n<p>Aus den Zutaten einen R\u00fchrteig zubereiten, eine Muffinform mit Papier auslegen und den Teig darin
